boudro's famous guacamole

While in San Antonio we had lunch at Boudro's.
Not only do they make the unforgettable Prickley Pair Margarita served in a martini glass, but they have the most to-die-for homemade guacamole.
And they make it table side!

Boudro's Famous Guacamole
Juice of 1/4 of an orange
Juice of 1/2 a lime
1 avocado seeded and scooped out of skin
2 Tbs roasted and charred Roma tomatoes diced
1 ea Serrano pepper roasted seeded and diced
1 Tbs medium dice red onions
1 tsp chopped cilantro
coarse ground salt to taste (sea salt is better)
Squeeze juices into bowl. Add avocado and coarsely chop. Add onions, roasted tomato, serrano and cilantro fold into avocado mixture. Add salt (more is better). Result should be crudely chopped not mashed. That's it.
*Recipe found on Boudro's website

And lucky for guac lovers like myself, they're making it table side here!

  5. um yes, my fam bam is from San Antonio. Mexican food anywhere else does NOT compare. You really have to go to this hole-in-the-wall off San Pedro by North Star mall called Teka Molina and get their puffy beef tacos and guacamole cup. TO DIE! My fave restaurant. Or if you happen to be in Boerne, you must eat at El Chaperrel (sp?). Best refried beans evvvaaaa.
